The reason why headings and bold tags are suggested is because the bots that review the content know that those words are more important and should hold more weight. The algorithm has been tweaked over time and it doesn't hold as much weight as it used to but it's still worthy of using. It's just like using your keywords in the title and first sentence. It adds weight to the keyword.
