It all depends on the system you are using but there are simple sitemap tools around.

Here's an excel macro I wrote to generate a site map from a Xenu (http://home.snafu.de/tilman/xenulink.html) crawl.

It's cumbersome if you are adding content regularly so I'd recommend you get one specific to your content management system.

If you use WordPress there are google sitemap plugins that install easily. If you need guidance, I can help you.

You can use the Google Sitemap Generator. It's on google webmasters tools.
Just google for "google sitemap generator"

There's a stand alone windows based tool on sourceforge. It's called google sitemap generator (oddly enough). Also, I've seen several online tools.
