Where i'm from most homes have two car or larger garages. Anyone have any idea what % off a homes value might be shaved off due to a single car garage?

That is too hard to say in another market. Try to find one that sold with a one car and then find a similar unit with a two car.

The problem is arriving at a comp value and then trying to set a
selling price. The agent or seller really has to know the market and
perception of marketability of the one car garage. The final selling
price and days on market can be more drastically affected than a
numerical analysis can reveal.

I would run a CMA and see what other homes have gone for similar to the one with 1 garage.

While you need a local REALTOR to answer this specifically, you good get a rudimentary idea by knowing the different costs associate with building a one car vs. a 2 car garage.
The problem is that number of garage spaces is somewhat intangible due to its importance (or lack there of) from a buyer.

Definetly talk to the local realtor before you try to figure this out on your own. Try finding out what some of the other houses in the area have sold for and this may help.
